  • 3 large eggs
  • 1 cup granulated sugar

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1 cup grated carrots
For the Cream Cheese Filling
  • 8 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
For Dusting
  • Powdered sugar

Method
 

  1. Step 1: Preheat the oven to 375°F (190°C). Prepare your jelly roll pan by lining it with parchment paper and lightly greasing it.
  2. Step 2: In a large mixing bowl, use an electric mixer to beat the eggs on high speed for about 3 minutes. Gradually add the granulated sugar and vanilla extract while mixing until fully combined.
  3. Step 3: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.
  4. Step 4: Gradually add the dry ingredients to the egg mixture. Mix until just combined. Gently fold in the grated carrots.
  5. Step 5: Pour the batter into the prepared jelly roll pan and spread it evenly. Bake for 13-15 minutes.
  6. Step 6: Dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel and roll it up with the towel inside. Allow it to cool completely.

  8. Step 8: Once the cake is cooled, unroll it and spread the cream cheese filling. Roll the cake back up without the towel and refrigerate for at least 1 hour to set.
