- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a large pot, bring water to a boil and cook the orzo pasta according to package instructions until al dente. Drain and set aside.
- Step 3: In a large skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, for about 20-25 minutes until golden brown.
- Step 4: Add minced garlic and fresh thyme to the skillet. Cook for an additional 2 minutes, stirring frequently.
- Step 5: In a mixing bowl, combine cooked orzo, caramelized onion mixture, vegetable broth, heavy cream, half of the Gruyère cheese, and season with salt and pepper. Mix well.
- Step 6: Grease the baking dish and pour the orzo mixture into it, spreading it evenly.
- Step 7: Sprinkle the remaining Gruyère cheese on top. Mix breadcrumbs with melted butter and sprinkle over the cheese.
- Step 8: Bake in the preheated oven for 25-30 minutes, until the top is golden brown and bubbly.
- Step 9: Remove from the oven and allow to cool slightly before serving.
