Ingredients
  

For the Almond Joy Cookies
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped almonds

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: Cream together the butter, granulated sugar, and brown sugar until smooth and creamy.
  3. Step 3: Beat in the eggs one at a time and then stir in the vanilla extract.
  4. Step 4: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Step 5: Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Step 6: Fold in the coconut, chocolate chips, and chopped almonds.
  7. Step 7: Drop spoonfuls of dough onto lined baking sheets, spacing them about 2 inches apart.
  8. Step 8: Bake for 10-12 minutes, or until the edges are golden brown.
  9. Step 9: Allow the cookies to cool on the baking sheets for about 5 minutes before transferring to wire racks to cool completely.
